IntroductionCoffee is a brewed drink prepared from roasted coffee beans, the seeds of berries from certain Coffea species. When coffee berries turn from green to bright red in color – indicating ripeness – they are picked, processed, and dried. Dried coffee seeds (referred to as "beans") are roasted to varying degrees, depending on the desired flavor. Roasted beans are ground and then brewed with near-boiling water to produce the beverage known as coffee. Coffee is darkly colored, bitter, slightly acidic and has a stimulating effect in humans, primarily due to its caffeine content. It is one of the most popular drinks in the world, and can be prepared and presented in a variety of ways (e.g., espresso, French press, caffè latte, or already-brewed canned coffee). It is usually served hot, although chilled or iced coffee is common. Sugar, sugar substitutes, milk or cream are often used to lessen the bitter taste. Clinical research indicates that moderate coffee consumption is benign or mildly beneficial as a stimulant in healthy adults, with continuing research on whether long-term consumption reduces the risk of some diseases, although some of the long-term studies are of questionable credibility. Selected article -Bica is the term commonly used in certain areas of Portugal for a "café" (coffee in Portuguese) that is similar to espresso, but extracted to a greater volume than its Italian counterpart (akin to a lungo in Italy) and a little bit smoother in taste, due to the Portuguese roasting process being slightly lighter than the Italian one. In almost all regions in Portugal, it is simply called 'um café' (a coffee in Portuguese) and always served in a Demitasse cup. The name bica originates from the way the coffee flows, falling from the espresso machine to the cup on the tray, an analogy with a water spring or fountain, both can also be called bica in Portuguese. Specifically, it refers to an espresso shot which is sweetened (traditionally with natural brown sugar which has been whipped with the first and strongest drops of espresso). However, the name is sometimes used to refer to coffee-based drinks that include Cuban espresso as their main ingredient, such as café con leche. Drinking café cubano remains a prominent social and cultural activity in Cuba and in Cuban-American communities, particularly in Miami, Tampa and the Florida Keys.
